Mediterranean Homemade Tomato, Basil and Ricotta Pizza
It is so easy to make a delicious Mediterranean pizza at home, this rustic tomato, basil and ricotta pizza has a fresh, light flavor with a little bit of heat from the jalapenos.
Dough Ingredients for Mediterranean Pizza
3 cups all purpose flour
1 teaspoon fast acting dry yeast
1 teaspoon sugar
1/2 cup warm milk
1/2 cup warm water
1 tablespoons olive oil
1/2 teaspoon salt
In a bowl, add milk, water, sugar and
yeast.
Cover and leave in a warm place for about
5 to 10 minutes or until the yeast is activated and bubbles form.
Sift flour and salt together in a large
bowl.
Make a well in the middle, add olive
oil and yeast mixture.
Mix well with a fork, pour out onto a
lightly floured surface and knead the dough for 10 minutes.
Place the dough back into the bowl
cover and keep in warm place for 45 minutes to an hour until the dough doubles
in size.
Cut the dough to two.
On a lightly floured surface roll out
each dough to the desired shape.
Pizza Sauce
1 cup tomato puree
2 garlic cloves chopped
1 tablespoon olive oil
1/2 teaspoon dry oregano
salt and pepper to taste
Mix all sauce ingredients together.
Pizza Topping
2 tomatoes sliced
1 large onion sliced
1/2 cup fresh basil leaves
4 nos pickled jalapenos
1/2 cup ricotta cheese
olive oil
Method
Pre-heat oven at 200 degrees
Place pizza dough onto a lightly
greased bake tray
Spoon half the sauce onto each pizza
base, top with sliced tomatoes, onions, basil, jalapenos and
ricotta.
Drizzle a little olive oil on top and
bake for 15 to 20 minutes
