Pasta With Tomatoes, Black Olives and Herbs
A healthy, quick and easy pasta dish with fresh tomatoes, black olives and herbs.
Even when I am busy and don't have a lot of time to cook, I still want to prepare something healthy to eat, this is a superb anytime pasta, it's great as a quick and tasty lunch.
Make a fresh salad to go with it and you will have a perfect meal.
Ingredients
1 packet spiral pasta (500 grams)
2 fresh tomatoes chopped
1 red bell pepper diced
3 garlic cloves chopped
1 onion diced
1 cup fresh basil leaves
1 teaspoon dry oregano
1 cup whole pitted black olives
500g tomato purée
3 tablespoons olive oil
Salt
Freshly ground black pepper
Grated Parmesan cheese to serve
Method
Cook the pasta until al dente, drain and put on the side
In a pot, heat the oil
Add in the onions and garlic, cook for about 3 minutes or until the onions are translucent.
Add in bell peppers, chopped tomatoes and oregano
Cook for 3 minutes
Pour in the tomato purée
Add in Black olives, salt and pepper
Simmer for 5 minutes
Add in the fresh basil and cooked pasta
Toss well
Serve with some grated Parmesan cheese.
