Homemade Ricotta Cheese 


Ricotta cheese is a fresh Italian cheese, it is often used in desserts and pasta dishes.
Ricotta is a soft cheese with a mild flavor and a slightly sweet taste, it is one of the easiest fresh cheeses to make at home and you will only need two ingredients, pasteurized milk and white vinegar.

I like to make fresh ricotta cheese as needed, it takes just a few minutes to whip up and it tastes much better then store bought.

 Ingredients to make one cup of fresh homemade ricotta cheese


1 liter pasteurized milk
3 to 4 tablespoons white vinegar

Method


Heat milk until just below boiling point, it should be about 175'F
Remove from the heat
Add 3 to 4 tablespoons of vinegar and stir delicately 3 to 5 times, make sure to stir gently as you don't want to disturb the curds.
Leave on the side for about 5 minutes
Gently scoop out the curds and put them in a cheese cloth to drain
Once all the liquid has drained, gently scoop the cheese and put it into a container and refrigerate.
The curds will be soft and delicate when they are warm, once refrigerated the curds will be more sturdy.
